You will need a nine-inch unbaked pie shell. Then cream two tablespoons butter with one cup of brown sugar. Add two beaten eggs. Next, mix in two rounded (not heaping!) tablespoons flour. Fold in three cups of rhubarb. Bake at 400 degrees F for 10 minutes, and then reduce heat to 350 degrees for 40-45 minutes or more. Filling should be set and top lightly browned.
Why is this pie different from any other rhubarb pie? Rosemary stepped out of the traditional and used brown sugar instead of white.
