That’s me. I LOVE cheesecake and I am always trying cheesecake recipes that promise to be low calorie, but completely yummy in spite of that. No such luck! Until I came across a pretend cheesecake made of yogurt and tweaked it into this version.
Brenda’s Almost Cheesecake
750 grams fat-free Greek yogurt drained as follows.
Place 4-5 layers of cheese cloth in a flat dish. Add yogurt and wrap cheesecloth around it. Cover and refrigerate. Every day drain off any liquid which forms. Push down on the cheesecloth too.
Repeat for 3-4 days or until yogurt seems very dry. Proceed with rest of recipe.
- In large mixing bowl add:
- Yogurt,
- 3 eggs,
- Sweetener to equal ¾-1 cup sugar,
- Extract or seasonings of your choice.
Options- vanilla, almond, sugar-free lemon gelatin, etc. (P.S. NOT all at the same time!)
Mix well. Spray a large pie plate with non-stick spray. Sprinkle in ¼ cup graham cracker crumbs. Add yogurt mixture. Bake at 325F just until a knife inserted in center comes out clean.
Is it cheesecake? Pretty close although purists might argue the point.
It’s like our Bible versions. People argue the point of the KJV against the MSG and against the NIV or the AMPC but the truth is they are all God’s word. Be prepared to listen and obey at lest one of them!
