Over the years I’ve published some of my favourite no fail recipes here and someone just asked if I could refresh their memory with them, so here goes.
Here is a helpful hint if you inherit someone’s old cookbooks. Only a few are really worth the money, time and effort they demand. The yummy ones are splashed with blobs of dough, sticky edges and finger prints. Those were the tasty ones. That’s how I found these Cherry Bites.
Cherry Bites
1 cup flour
½ cup butter
¼ cup brown sugar
Crumble together, pat into 9″ square pan. Bake at 350F for 8 minutes. Mix and then add the following ingredients on top.
2 well-beaten eggs
2 tablespoons flour
1 cup walnuts
½ pound candied cherries
1 ¼ cup brown sugar
½ teaspoon baking powder
½ cup finely shredded coconut
Return to oven and bake at 325 for 45 minutes. Top with butter icing if desired.
Like recipes, life gives us lots of opportunities, both good and bad. We’ve all chased bad ones by mistake but hopefully we’ve learned our lessons.
I’ve found the recipe for being happy whether full or hungry, hands full or hands empty. Whatever I have, wherever I am, I can make it through anything in the One who makes me who I am (From Philippians 4:1, MSG).
