Cauliflower Muffins

Oh don’t turn your nose up yet! These taste great! The ingredients and instructions follow.

Cauliflower Muffins

– 1 ½ pound cooked cauliflower
– 1 clove chopped garlic
– 2 large eggs
– 3 Tbsp all-purpose flour
– ½ cup grated Cheddar + some for topping
– Salt and pepper to taste
– 1 Tbsp mustard
– 3 Tbsp chopped onions

Mix ingredients together in food processor. Grease muffin pans; add batter. Sprinkle a bit more cheese on top of each muffin. Bake at 400°F for about 25 minutes. Makes 24 and they taste great either hot or cold. They also freeze well.

We look at folks around us and wonder how on earth or why on earth God would bother with them. They just don’t look like the kind of people we would invite into the kingdom of God.

Thankfully, they are just the kind of people that God wants… that is everybody. After all, he took you, didn’t he??

I tell you, open your eyes and look at the fields! They are ripe for harvest. Even now the one who reaps draws a wage and harvests a crop for eternal life, so that the sower and the reaper may be glad together. (John 4:35b-36, NIV)

Prayer – Father, forgive us for judging just who you want in your kingdom. What on earth do we know, compared to what you do. Sorry. Amen
