Rib Fest

Do you drool at the mention of a Rib Festival in your area? Some folks will drive miles out of their way to get a good feed of ribs but to my way of thinking there’s hardly a morsel’s worth of chewing on them. I am clearly outnumbered because even God had a preference for ribs. Go figure.

Genesis 2:21-22-So the Lord God caused the man to fall into a deep sleep; and while he was sleeping, he took one of the man’s ribs and then closed up the place with flesh.Then the Lord God made a woman from the rib he had taken out of the man, and he brought her to the man (NIV).

Because my family likes them, I cook them but I refuse the long tedium of barbecue. Even serious grillers appreciate this recipe when the icy fingers of frost trickle down their unsuspecting necks during cold winter months.

Sporkies  (Crock pot friendly)  Serves Six

2 pounds spareribs, fat trimmed, cut in pieces

6 medium potatoes, peeled

6 medium carrots cut in 1” chunks

6 medium onions, peeled

½ cup catsup

2 tablespoons cider vinegar

½ teaspoon salt

1 tablespoon mustard

1 tablespoon brown sugar

1 cup water

Place vegetables in large roast pan. Cover with rib pieces. Mix sauce ingredients together and pour over top. Bake at 350 F for 1 1/2-2 hours until veggies and meat are tender. You can baste this as it cooks but that may lengthen the cooking time.
