Green Curry Salmon Cakes   Serves 4-6

500g potatoes, peeled and chopped

2tbs green curry paste (choose a milder one if you prefer!)

½ cup chipped coriander

415g can of pink or red salmon, drained and flaked.

Cook the potatoes in boiling water until tender. Drain, mash and add your favourite seasonings.

Bring to boil in large sauce pan of water until the potatoes are tender. Add the rest of the ingredients and form mixture into patties.  Cook about 4 minutes each side in a non-stick frying pan until golden brown. Serve with vegetables, salad or other choices.

Note that cakes are quite Biblical! LOL!
